A
quick and easy home made chicken noodle soup that is pure comfort food and lick
your bowl clean good!
ingredients
·
1 tablespoon oil
·
1 onion, diced
·
2 carrots, diced
·
2 stalks celery, diced
·
4 cups chicken broth or chicken stock
·
2 cups cooked chicken,
cut into small pieces
·
1 teaspoon poultry
seasoning
·
2 cups egg noodles
(gluten free for gluten free)
·
1/2 lemon, juice
(optional)
·
salt and pepper to taste
·
1 handful parsley, chopped
directions
1.
Heat the oil in a large
stock pot over medium-high heat, add the onions, carrot and celery and cook
until tender, about 8-10 minutes.
2.
Add the chicken broth or
stock, chicken and poultry seasoning, bring to a boil, reduce the heat and
simmer for 5 minutes.
3.
Add the noodles and
simmer until just tender, about 5 minutes.
4.
Season with salt and
pepper to taste and mix in the parsley.
