Slow Cooker Italian Chicken
Meatballs - the whole family will love these super tender Italian Style Chicken
Meatballs in a Rich Tomato Sauce.

INGREDIENTS
FOR THE MEATBALLS

500g
of extra lean ground chicken, raw
·
1/4
cup (30g) of breadcrumbs
·
1/2
tsp of garlic powder
·
1/4
tsp of onion powder
·
salt
and black pepper
·
fresh
chopped parsley
·
1
egg
FOR THE SAUCE
·

1.5
cups (320ml) of crushed tomatoes (or passata*)
·
1/3
cup (80ml) of chicken stock
·
2
tbs of tomato paste
·
1
tbs of balsamic vinegar
·
2
garlic cloves, crushed
·
1
tsp of dried rosemary
·
1
tsp of dried oregano
·
pinch
of dried basil
·
fresh
chopped parsley
·
salt
and pepper to season
INSTRUCTIONS
1.
Add
all the ingredients for the sauce to a bowl, and mix till well combined.
2.
Add
into into the slow cooker.
3.
Add
the ingredients for the meatballs to a bowl and mix to combine then form into
meatballs. ( I made 12 decent sized ones).
4.
Carefully
drop them into the sauce and spoon some of the sauce over any uncovered ones.
5.
Set
slow cooker on low for 6 hours.
6.
Once
cooked, season to taste with salt and black pepper and sprinkle with fresh
parsley and serve with your choice of sides.
7. A little finely grated
parmesan over the top synned or as part of your healthy extra A choice is a
great addition.
