Pigs in a Blanket Breakfast Casserole - seriously the BEST!!! Crescent rolls, dijon mustard, lil smokies, cheese, eggs and milk. SO simple and SOOO delicious! Great for breakfast, brunch, lunch, dinner and tailgating! I mean, nothing says football food like pigs in a blanket. Everyone LOVED this easy breakfast casserole. INGREDIENTS:

·                     1 (8-count) tube refrigerated crescent rolls
·                     1 (4-count) tube refrigerated crescent rolls
·                     1 (14-oz) package Lit'l Smokies
·                     1/4 cup dijon mustard
·                     5 eggs
·                     1-1/2 cups milk
·                     2 cups shredded cheddar cheese
·                     salt and pepper

INSTRUCTIONS:

1.            Preheat oven to 375ºF. Lightly spray a 9x13-inch baking pan with cooking spray.
2.            Unroll both cans of crescent rolls; separate into 12 triangles. Spread a heaping teaspoon of Dijon mustard on each triangle.  Cut each triangle lengthwise into 3 narrow triangles.
3.            Place sausage on wide side of each triangle. Roll up and place in prepared pan.
4.            Top pigs in a blanket with shredded cheese.
5.            Whisk together eggs, milk, salt and pepper. Pour over pigs in a blanket.
6.            Bake for 30 to 40 minutes, until egg mixture is set.
