MANGO COCONUT CHIA PUDDING

Ingredients
  • 1 cup coconut milk
  • 1 cup almond milk
  • 1/3 cup chia seeds
  • 1/3 cup unsweetened coconut flakes
  • 2 Tablespoons maple syrup
  • For the mango puree:
  • 2 cups mango, cut into cubes
  • 2 Tablespoons maple syrup


Instructions

·         In a mixing bowl, whisk together the coconut and almond milk, chia seeds, coconut flakes and maple syrup until well combined. Place in the refrigerator for at least a few hours or until thick and of a pudding-like texture.
·         Meanwhile, blend the mango and maple syrup in a blender on HIGH until smooth and creamy. Place in a container and refrigerate until ready to serve.
·         To serve, layer the mango puree and chia pudding mixture in a serving dish. Be creative! Top with extra shredded coconut and mango.
