Chicken Casserole

Ingredients
·
4 chicken breasts,
cooked and cubed (or shredded)
·
1 cup sour cream
·
1 (10.75 oz) can cream
of chicken soup or mushroom soup
·
25 Ritz crackers,
crushed
·
1/2 cup butter, melted
·
2 Tbs poppy seeds
Instructions
1.
Preheat oven to 350F
degrees. Spray a 9×9 square baking dish with no-stick cooking spray.
2.
Place cubed chicken in
a prepared baking dish.
3.
In a medium bowl, stir
together the soup and the sour cream until well blended, and pour over the
chicken.
4.
In a separate bowl,
stir together the crushed crackers and melted butter. Pour over the soup
mixture layer. Top with poppy seed.
5.
Cover and bake for 30
minutes, until crumbs are golden brown and casserole is hot and the sauce is
bubbly (or freeze for baking at another time).
6.
Serve plain or over
rice.
