THAI CRAB CAKES
Seriously addictive Low Syn Thai
Crab Cakes for a perfect light meal or appetizer.

INGREDIENTS
·
120g
of crab meat
·
4
spring onions, chopped
·
2
eggs
·
1
tbs of cornstarch- 1.5 syns (or arrowroot or tapioca powder)
·
1
tbs of red Thai Curry Paste - 1 syn
·
juice
of half a lime
·
1
tsp of sweetener
·
salt
and black pepper
·
cooking
oil spray
INSTRUCTIONS
1.
Add
the eggs, cornflour, spring onion, Thai curry paste, juice of half a lime and
sweetener to a bowl and mix to combine
2.
Add
the crab and a little salt and pepper and gently fold till the crab is mixed in
(it's best not to over mix, so that you still keep chunks of crab in the mix.
3.
Spray
a frying pan over a medium high heat with some cooking oil spray
4.
Divide
the mixture into half and then spoon one half of the mixture onto the pan into
3 even sized cakes.
5.
Cook
on one side till lightly golden and then flip.
6.
Repeat
with the other half of the mixture (so you have 6 cakes in total)
7. Serve with your choice of
sides and enjoy!!!
