LOW SYN VEGAN LENTIL DUMPLINGS

Try these delicious Low Syn Vegan Lentil Dumplings - a perfect addition to any stew, soup or casserole.
PREP TIME10 minutes

TOTAL TIME40 minutes
INGREDIENTS
·      1 cup (200g) of red lentils
·      2 cups (480ml) of water (or can use stock)
·      pinch of salt
·      pinch of black pepper
·      pinch of red pepper flakes (optional)
·      1 tsp of mixed Italian herbs
·      2 tsp of chopped fresh parsley
·      1/4 cup (4 tbs) of flour
·      1/2 tsp of baking powder
·      cooking oil spray
INSTRUCTIONS
1.   Add the lentils to a saucepan, cover with the water, bring to a boil, then reduce heat to a simmer.
2.   Stir occasionally until all liquid is absorbed (ensure you cook off the majority of the liquid)
3.   Add the lentils to a bowl and allow to cool.
4.   Preheat oven to 200c/400f (gas mark 6)
5.   Add the salt, pepper, red pepper flakes and herbs to the lentils and mix to combine.
6.   Mix together the flour and baking powder and add this into the lentils, ensure it is all combined.
7.   Form into 12 equal sized balls.
8.   Add the balls to a baking tray lined with parchment paper and flatten down a little bit.
9.   Spray over the top with cooking oil spray.
10.       Bake in the oven for approx 15-20 mins until firm.
11.       Add to soup, stew or casseroles
