Ingredients
· 2
cups (480ml) of cooked chickpeas, drained
· ¾
cup (180ml) of mashed cooked sweet potato
· 100g
red onion, chopped
· 2
cloves of garlic, crushed
· 1
tsp of ground cumin
· 1
tsp of ground coriander
· 1
tsp of salt
· 2
eggs
· handful
of fresh parsley
· handful
of fresh coriander (cilantro)
· spray
oil
· ½
cup of yoghurt
· juice
of half a lemon
· bunch
of fresh mint, finely chopped
· pinch
of salt
· 1
tsp of sukrin: 1 (or other sweetener of
choice)
Method
1. Preheat
oven to 200c, 400f (gas mark 6)
2. Add
the chickpeas, sweet potato, onion, garlic, cumin, coriander, salt, eggs,
parsley and cilantro to a food processor and blitz until all ingredients come
together.
3. Line
a baking tray with parchment paper and dollop spoonfuls of the mixture on the
tray equal distance apart.
4. Smooth
over to into desired shape (I make them into little patties)
5. Spray
over the top with spray oil and place in the oven and bake for 30 mins until
golden.
6. Mix
together yoghurt, mint, lemon juice and sukrin:1 and serve on the side with a
salad of crisp greens, cucumber and red onion.
7. These
are also yummy served in a HEb wrap or pita
