Cranberry Chipotle Ketchup

A
sweet-and-smoky ketchup that's perfect with sweet potato fries. Adapted from
Cranberry Ketchup (Cooking Light).
Ingredients
§
1 2/3 c. fresh cranberries
§
1/2 c. packed brown sugar
§
1/2 c. chopped shallots
§
1/4 c. cider vinegar
§
1/4 c. water
§
1/2 tsp. salt
§
2 tsp. minced chipotle chiles in adobo sauce (more or less is
fine--use what you're comfortable with)
Instructions
1.
Combine all ingredients in a medium saucepan over medium-high
heat. Bring to a boil and cook 10 minutes or until thick, stirring
occasionally.
2.
Remove from heat and allow to cool for approximately 10 minutes.
Process until smooth in a blender or food processor (I used an immersion blender). Transfer
to bowl; cover and chill.
