Instant Pot Salsa Chicken is
a quick and easy recipe to make with just a few ingredients. With only 30
minutes of your time, you can have a perfectly healthy meal that can be used in
tacos, burritos, over rice and salads.
Ingredients

3-4 lbs chicken breasts boneless and skinless fresh or frozen
·
1 1/2 cups chicken broth water or pineapple juice
·
1 cup salsa mild or hot
·
1 tablespoon minced garlic
·
1 jalapeno chopped
·
1/2 teaspoon salt
·
1/4 teaspoon ground black pepper
·
1 tablespoon onion powder
·
1 teaspoon Italian seasoning herbs
·
1/4 teaspoon red pepper flakes optional
·
Juice and zest from one lime
Instructions
1. If using frozen chicken,
before you add it to the Pressure Cooker, make sure its not stuck together.
2. Add chicken breasts to the
Instant Pot. It is okay if the breasts overlap.
3. Add liquid of choice (broth,
water, or juice) and the rest of the ingredients.
4. Place the lid and lock it,
make sure to point the valve to sealing.
5. Press manual and select
12-15 minutes for fresh/thawed chicken breasts, or 20-25 minutes, for frozen.
It will take the pot about 10 minutes to come to pressure.
6. Once the cooking is done and
you hear a beep, leave additional 10-15 minute Natural Pressure Release.
7. After, open the valve to
release the remaining pressure.
8. Fully cooked chicken breast
should have internal temperature of 165 degrees F.
9. You can chop it and serve it
as it is, or transfer the chicken to a large bowl and shred it. Use the cooking
liquid to add it to the shredded chicken to make it moist and flavorful.
10. Enjoy over tacos, burritos,
enchiladas, or salads.
