Chicken Fajita Soup

A
quick and easy chicken soup with all of the flavours of fajitas!
ingredients

1 tablespoon oil
·
1 large onion, sliced or
diced
·
2 bell peppers, sliced
or diced
·
4 cloves garlic, chopped
·
1 tablespoon taco seasoning
·
3 cups chicken broth or chicken stock
·
1 (15 ounce) can diced
tomatoes
·
2 cups cooked chicken,
sliced or shredded *
·
1 tablespoon lime juice
·
1/4 cup cilantro,
chopped
·
salt and pepper to taste
directions
1.
Heat the oil in a large
sauce pan over medium-high heat, add the onions and bell peppers and cook until
tender, about 3-5 minutes.
2.
Add the garlic and taco
seasoning and cook until fragrant, about a minute.
3.
Add the chicken broth
and deglaze the pan by scraping up any brown bits from the bottom of the pan
with a wooden spoon as the broth sizzles.
4.
Add the tomatoes and
chicken, reduce the heat and simmer for 5 minutes before adding the lime juice
and cilantro and seasoning with salt and pepper to taste.
