Easy One Pot Cauliflower Mac and Cheese

Ingredients
·         4 cups organic milk
·         1 cup chicken bone broth
·         3 tablespoons grass-fed butter
·         1 teaspoon Celtic sea salt
·         12 ounces gluten free macaroni or fusilli, shells, penne, etc.
·         1 small head cauliflower, cut into small florets
·         8 ounces organic cheddar cheese, grated
·         4 ounces organic cream cheese
·         2 ounces parmigiano-reggiano, grated
·         1 ounce gruyère, grated

Instructions

1.    Add milk, bone broth, butter and sea salt to a large saucepan or medium stockpot. Bring to a boil over medium heat. Add pasta and cook for 3 minutes, stirring occasionally. Add cauliflower florets and cook until al dente, about 7 minutes, stirring occasionally. Remove from heat. Add cream cheese and grated cheeses, stir until fully combined. Allow to sit 5 minutes before serving.

Yield: Makes 6-8 servings
