Ingredients:

·         Two pounds chicken breast with no bones
·         ½ small glasses coconut milk with no sweet that has been canned
·         ¼ small glasses soy sauce with low sodium
·         ¼ small honey
·         30 gr Thai red curry, the paste one
·         Quinoa, here you may use rice
·         Cilantro or Thai basil
·         Mango, peanuts, lemons, and peppers
Thai Peanut Sauce
·         One can of pure coconut milk
·         ½ small glasses peanut butter
·         30 gr fish sauce
·         30 gr soy sauce with low sodium
·         30 gr Thai red curry, the paste one
·         30 gr Tamarind
·         Lime juice

Directions:

1.      1Shake coconut milk, Thai red curry paste, soy sauce, and honey in a bowl. Raise a quarter cup of seasoning and spare to cook. In a large ziplock bag, put the chicken and add the remaining seasoning over the chicken. Set it aside for 30 minutes or keep it in the fridge for a night.
2.      2While waiting for the chicken, you can make the peanut sauce. Prepare a small saucepan, mix all ingredients and turn the heat over medium heat, cook while stirring until smooth then add lemon juice. You may add water if needed. Then, heat the grill, or you may use the pan and turn to medium heat.
3.      3Put and grill the chicken for 8 minutes on each side, brush the coconut milk over the chicken until it is cooked through. After that, put it on a plate. Pour the peanut sauce over chicken.
