Parmesan Sweet Potato Fries with Ranch Dressing

This recipe is gluten free, vegetarian, Slimming World and Weight Watchers friendly
·         Extra Easy - 1/2 HEa per serving (syns depend on how much ranch you use)
·         Green/Vegetarian - 1/2 HEa per serving (syns depend on how much ranch you use)

Ingredients
·         600 of sweet potato, sliced thinly into long fries
·         1 tsp of paprika
·         1/2 tsp of chilli powder or pinch of cayenne if you like spicy. 
·         1/4 tsp of sea salt
·         30g (1oz) of parmesan, grated
·         1 egg
·         spray oil
·         mixed baby greens
·         2 tbs homemade low syn ranch dressing (click for recipe)
·         2 spring onions, chopped
Instructions
1.    Preheat oven to 200c or 400f
2.    In a large bowl whisk together egg, parmesan, paprika and chilli powder
3.    Add the sweet potato and toss to coat
4.    Spray with spray oil and toss again.
5.    Spread out on a baking tray lined with parchment paper (you may need two trays, as it's important that they are well spaced out to prevent from steaming).
6.    Spray over the top with spray oil and season with the salt.
7.    Place in the oven and bake for approx 30-40mins, turning half way through, cook till golden and crisp.
8.    Plate up some mixed greens, top with the fries and drizzle with the ranch dressing.
9.    Dig in and enjoy!!
